Family Recipe: Gazpacho
Andrew's mom, Jovi, is from Madrid and she makes the best gazpacho. She knows every variation under the sun, but she swears this handwritten recipe is what gazpacho is supposed to be. It's her family recipe and the one we make all summer long. It's so simple too.
Gazpacho
Gather & Prepare
Rough chop 5 ripe tomatoes, seed and core one medium green pepper, dice 1 cucumber partially peeled, add 5 cloves of garlic and a piece of bread. Just cover it with water and marinade for a few minutes. Add salt, vinegar, and oil. Blend until it is smooth. Put it in the fridge to chill.
Serve & Enjoy
She serves it chilled in bowls that you just sip, no spoons needed. If you want to get fancy, finely dice all of those ingredients in to tiny little cubes to garnish it. It's best in the afternoon on a hot day, ice cold from the fridge.
